Fall has definitely arrived at Queens College of the City University of New York, the site of the first dinner in this TUTTOTOSCANA 2015 event. This 84-acre campus was established in 1937 and provides a nice backdrop to the menu.

In 2014 Princeton Review’s Guide to 334 Green Colleges, Queens College received glowing remarks for several initiatives, to include:

“A ten-year sustainability plan to increase energy efficiency and recycling, promote water conservation initiatives, encourage local sourcing and other sustainable practices in dining services and educate students to be good stewards of the environment.” In fact, we used some of the produce from the school garden, talk about using local and seasonal products!

It was a joy to serve our first formal dinner menu to the Queens academic community, which was preceded by an exclusive showing of pieces from the QC historic costume collection that had been donated to the institution by the MOMA (see details here). Guests were treated to fondue, quiche and ribollita finger food served by Queens College students as the guests enjoyed a fashion show (see related blog).

pre-dessert-webThe guests were escorted to a beautifully decorboysated dining room where they enjoyed quail eggs, ravioli, short ribs and polenta. The menu was capped by a pre-dessert and dessert that were not only pleasing to the eye, but tasted amazing!
