Andrea Trapani Designs De Gustibus Menu to Focus Member Attention on Technique

Kati Peters gets Andrea Trapani’s viewpoint on how a chef demonstrates Italian Riviera cusine to New Yorkers at prestigious De Gustibus cooking school.

Demonstrating four Riviera courses to 50 De Gustibus participants in a foreign country, specifically in New York City, no easy feat.

Chef Trapani explains how he and his Kitchen Brigade assistants will not only conduct their Italian Riviera demonstration, but keep all eyes on technique. Trapani brims with excitement as he speaks about teaching his dishes to eager culinary learners at De Gustibus, delivering a fresh outlook and approach on coastal Riviera cuisine. What’s critical is the composition of each recipe in the menu, with the added challenge of having local fresh ingredients. All Italian recipes are balanced and well-seasoned, and he intends to show that.

But let’s be clear: no Italian food stereotypes allowed here! Andrea intends to treat De Gustibus to a deluxe tasting of northern Tuscan specialties not commonly seen in Manhattan.

Simplicity and tradition are key to all techniques that he will demonstrate. Engaging members allows guests the opportunity observing the chef as he teaches them new local Riviera cooking techniques, and take home printed recipes. Prior to departure, all recipes are tested and tweaked to guarantee perfection. With so much expertise and careful planning, the De Gustibus event will impress members and guests with new methods and bona fide Northern Tuscan and Ligurian dishes.

Though a few seats are available for the public, reservations should be made asap to guarantee space.
