Our first event held at HSFI kicked off with Chef Simone De Castro who led the high school students on a metamorphic journey through food styling.
Using simple ingredients with a few alchemic touches, students transformed syrups into solids and drew forms with sauces in an exercise that drew beauty out of food. When asked to present their creations, students cited their creative approaches and starting points such as seasonality, emotion, strength, geometry, color, etc.
The kitchen brigade served a family-style meal beginning with a trio of crostini. The Florentine crespelle were a crowd favorite with its colorful tomato sauce and spinach-laced crepes. From the bread baked in-house by our pastry team to the wholesome and delicious sides, every single item of the menu was crafted by our team with care and attention to detail in order to provide a casual, intimate yet elegant experience for the HSFI students. The evening was a solid start for the TuttoToscana team, which had the opportunity to work together as a team for prep in the days prior to HSFI yet still had to prove itself as a unified group in front of a real audience.
