Tomas Curi is a former student of the Apicius Culinary Arts Department. Originally from Houston, Texas, he came to Florence to sharpen his Italian food knowledge and skills, and of course to travel throughout Italy to discover its foods. Upon returning to the US, he landed major cooking gigs in NYC restaurants such as Bar Milano, Falai and A Voce, as well as restaurants in the West Coast food mecca of Portland.
Tomas was recently interviewed by Patrick Martins on The Main Course program at Heritage Radio broadcasted from Bushwick, Brooklyn in NYC. Tomas discusses the impact of the Italian experience, working in NY kitchens, how it’s important to properly push Italian cuisine in the US, and provides insight on his current position of executive chef at the West Village restaurant Cantina Corsino where regional cuisine is a main focus.
