Francesco Vigorito is a passionate student of wine and food at the Apicius International School of hospitality. Having grown up in an Italian family in New Jersey, food and wine have been an integral part of his life since childhood. He started to become really interested in wine when he tasted one of Italy’s best wines at the family celebration for his high school graduation. “It’s amazing how one bottle of wine can have such an effect on your life” he quotes. From that point on, Francesco has devoted much of his of his time to the science and enjoyment of this ancient libation. After graduating from Rutgers University with a Bachelor of Science, Francesco enrolled in the Wine Expertise program at Apicius. He also started a blog that targets new and aspiring wine lovers called The Ryde Inside. “Inside every bottle of wine is an adventure waiting to be uncorked, regardless of its quality” Francesco says. The blog sets a friendly tone with writing that is fun and simple to read, yet presents the information is a professional style. Blog posts range from wine and food pairings to wine science and to basically anything he feels like writing that day. There is a little catch; his blog also tries to incorporate some aspects of science as it pertains to wine and everyday life. He believes that the enjoyment of wines is tweaked a few notches when one understands the process and the chemistry that turns vines into wines making the science more relevant and beverage more meaningful.
