TuttoToscana: Sharing Inspiration from Liguria and Tuscany: “A STRAIGHT APPROACH TO THE ITALIAN RIVIERA” – A. Trapani

Emily Berryhill gets the inside scoop: what drives Ligurian native Trapani, and Tuscan Carrega in featuring their own regional specialties? Em interviewed Apicius Executive Chef Andrea Trapani and Enologist Camilla Carrega about the importance of TuttoToscana bringing special Italian Riviera cuisine to New York October 24-29, 2011.

TuttoToscana wants to know: how do Chef Andrea Trapani, and Enologist Camilla Carrega pair regional wine and cuisine perfectly to reflect the culture of their native Liguria and Tuscany?

More than just a catch-phrase, TuttoToscana, or “everything Tuscan” is not only their personal passionate way of experiencing life, studies, food, wine and culture every single day, but their method of inspiration for everybody, not just their students.

“That is the main goal, but also the main satisfaction; to teach our culture and our roots,” explains Carrega, who spent 27 consecutive summers in Northern Tuscany. Literally raised on a family vineyard near Florence, Castello di Volognano, Carrega emphasizes the extensive responsibility of teaching this lifestyle.

Realizing the vital goal of sharing succulent home territory Italian Riviera flavors at New York’s James Beard Foundation, Astor Center and De Gustibus, is a big thrill. Because to Andrea and Camilla, the importance of TuttoToscana is integrally linked to inspiration and education. By sharing their heritage, evoking strong memories and emotional connections to food to places, feelings and sensations, the industry, media and public will come away with an authentic piece of the Italian Riveria to take home.
