The Harmonious Heron: Casanuova’s Guardabuoi IGT Toscana Rosato

A small wading white bird with an amber crown, orange beak, and yellow eyes approaches a nearby group of cattle sunbathing on a bed a grass. The heron makes its way to become face-to-face with the large brown animal and meticulously stretches its neck out to peak the cow’s face. Unphased by this invasion of personal space, the cow continues to aimlessly munch on the grass before it. The white bird’s sole intention was to capture the flies surrounding the cow’s eyes. This bird is named “Guardabuoi,” which translates to cattle egret, referring to this common behavior of the bird. The cattle and guardabuoi are in a mutually beneficial symbiotic relationship, much like the dynamic between winemakers as Casanuova and the environment. 

Guardabuoi by Casanuova is a rosé wine that resembles the heron’s orange hue in color. The wine is made from the red grape varieties of Sangiovese and Merlot, but does not get the color since Casanuova vinifies the grape blend as white. This means that the winemakers quickly separate the grape skins from the liquid so the skins only slightly taint the juice. 

This is an easily enjoyable wine which tastes and smells pleasant straight away. The Guardabuoi is a well-balanced wine, not overpowering in flavor but not too flat either, making this rosé best consumed with food. I would suggest pairing it with dishes containing white meat. Think roasted chicken, turkey, fish, pork, or pasta dishes with sauces not made from tomatoes or beef. As for smelling notes, you might notice notes of floral scents of roses, fruity scents of strawberries or raspberries, along with a powdery aroma that resembles the scent of makeup powder.

Of the thirty one hectares of land seventeen of them is dedicated to preserving the natural forest. This is because they find that the forest offers natural protection from insects and environmental changes. It gives back to them as much as they give to protect it–much like the relationship between the cow and guardabuoi.

This rosé would pair very nicely with the Roasted Cod Fish at Ganzo. Located on the menu under main courses, the fish is served on a bed of corn velouté–which is a rich, creamy corn puree–served with stewed lentils and chestnuts.
