The Apicius School of Hospitality’s Ganzo School Restaurant features weekly wine specials throughout the semester. This semester, customers are asked to pay special attention to the 2016 Francesco I as well as Castello del Trebbio’s Congiura Bianco.

Founded in 1793, Uberti is one of Franciacorta’s historic family-run estates, dedicated exclusively to the production of high-quality sparkling wines through Metodo Classico. Rooted in precision, elegance, and terroir expression, the winery combines tradition with modern innovation to craft their famous Franciacorta. Metodo Classico– a secondary fermentation in a bottle and aged on lees for over two years– creates this wine primarily of Pinot Nero and Chardonnay. This Extra-Brut style highlights structure and minerality with minimal dosage, allowing the purity of the grapes to come through.
Careful vineyard selection and meticulous cellar practices ensure balance and refinement, reflecting the estate’s longstanding commitment to excellence and the distinctive character of the region’s soils. Long lees aging enhances texture and complexity, contributing subtle nuances and depth while preserving freshness and finesse through the wine.
Once poured, Francesco I reveals fine, persistent perlage and aromas of citrus, white flowers, and fresh bread crust. A crisp acidity and vibrant minerality lead to a clean and elegant finish. This Franciacorta pairs beautifully with oysters, raw seafood, sushi, and delicate white fish dishes.
Nestled in the hills of Chianti Rufina near Florence, Castello del Trebbio is a historic castle estate owned by the Baj Macario family. In addition to wine production, the estate produces olive oil and offers agritourism experiences for guests, preserving Tuscan heritage while embracing environmental sustainability through their BioIntegrale philosophy. “Congiura Bianco” reflects the estate’s commitment to freshness and territorial identity. Crafted from indigenous and selected white grape varieties, the wine is gently pressed and fermented in stainless steel to preserve aromatic purity and natural vibrancy.
Rooted in centuries of history, the estate combines traditional craftsmanship with modern precision, ensuring each bottle expresses the character of its vineyards and the unique microclimate of the surrounding hills.
As a result, the wine is an expressive white wine with aromas of citrus, green apple, and white flowers. Light-bodied with crisp acidity and subtle minerality, “Congiura Bianco” offers an approachable, refreshing profile. “Congiura Bianco” pairs beautifully with seafood pastas, fresh salads, soft cheeses and light poultry dishes, making it a versatile wine for aperitivo or various meals.
