The Apicius School of Hospitality’s Ganzo School Restaurant features weekly wine specials throughout the semester. This semester, customers are asked to pay special attention to the Olianas DOC’s Vermentino di Sardegna as well as Fortulla Rosso’s IGT Toscana Rosso

OLIANAS
DOC Vermentino di Sardegna
Tenuta Olianas crafts wines rooted in biodiversity and territorial identity, located in the Sarcidano plateau of Sardinia. The estate follows a BioIntegrale approach by farming without synthetic chemicals and encouraging natural balance in the vineyard. Fermentations rely on indigenous yeasts, with little intervention in the cellar to preserve authenticity.
The 2024 Vermentino is sourced from the Murvonis and Porruddu vineyards. Around 20% of the grapes are harvested early and macerated to create a pied de cuve, which initiates fermentation. The remaining fruit is gently pressed and fermented in stainless steel. Aging takes place partly in steel and partly in oak tonneaux, enhancing texture while maintaining freshness.
In the glass, it reveals a bright straw-yellow color with aromas of orange blossom and citrus. Notes of pink grapefruit, lemon, and subtle spice unfold on a fresh, savory palate, supported by lively acidity and a mineral finish. Ideal with seafood, shellfish, fish-based pasta, or medium-aged cheeses.
FORTULLA ROSSO
IGT Toscana Rosso
Produced near Castiglioncello on the Tuscan coast, Tenuta Fortulla is a certified organic estate shaped by Mediterranean light and maritime influence. The vineyards benefit from sea breezes that help preserve balance and aromatic clarity. The estate emphasizes hand harvesting and sustainable viticulture to express its coastal terroir.
Fortulla Rosso IGT Toscana is a blend of organically grown Cabernet Franc and Cabernet Sauvignon. After harvest, the grapes undergo cold maceration and fermentation in temperature-controlled stainless steel and concrete for around twenty days. The wine matures for about eight months in concrete vessels, tronco-conic vats, and small French oak barrels before bottle aging.
Deep ruby red in color, it presents aromas of green pepper, plum, and morello cherry with subtle spice. The palate is structured yet refined, offering elegant tannins and a persistent, balanced finish. It pairs well with tomato-based pasta dishes, grilled red meats, and hearty stews.
